 I would like to share with you some of my favorite Cranberry recipes. I hope you will try one or two. Enjoy them with your families and reap the health benefits of this amazing little berry.
 
Cranberry Crumble

2 Apples chopped
1C Sugar
1 pkg. Cranberries
 
1 ½ C quick Oats
1/3 C Flour
½ C Brown Sugar
½ C Melted Margarine
Combine apples, sugar and cranberries.
Place them in a baking dish .
 
Mix Oats, flour, brown sugar and melted margarine and spread mixture on top of cranberry mixture.
 
Bake at 350 for 1 hour.

 
 
Cranberry Orange Relish

1 unpeeled orange, cut into eighths and seeded
1 pkg. of cranberries
1 C sugar
 
Optional: Crushed pineapple and walnuts.
Place half the cranberries and the oranges and sugar in food processor. Process until mixture is evenly chopped. Add the rest of cranberries and process just for a couple of seconds. You want some texture in the cranberries.
 
Add crushed pineapple and chopped nuts if desired.

 
Cranberry and Sweet Potatoes

1 ½ lbs. sweet potatoes, peeled and cut into ½ inch cubes
1 C cranberries
1 large apple, peeled and cut into ½ inch cubes
¼ C melted margarine
½ C raisins (optional)
½ C sugar
½ t cinnamon
Preheat oven to 350
 
Combine all ingredients together. Place in shallow casserole dish. Cover and bake for 40 minutes or until potatoes are almost done, stirring occasionally. While baking if you see that the potatoes are getting a little dry add ¼ C of apple juice.
